I was wondering what the difference is between your product which looks like it is in a sealed glass jar and some others which say that they continue to ferment in the jar?

Our Sauerkraut & Kimchi-Kraut are locally made by us here in Petworth. It is important to us that we always use organic locally grown cabbages and other vegetables.
Our products are fully fermented before we send them to our customers. On rare occasions, customers have asked if they are able to ferment our products further, to achieve an even deeper mature flavour. We advise them to place our jars of SK & KK in a warm dark place for a couple of days, making sure they untwist the jar lid. It is important to untwist jar lids when fermenting, as this allows the Co2 gas build-up to escape. The extra pressure created by Co2 gas build-up, would pop the jar lid off.
Many companies sell Sauerkraut as a pasteurised product, but pasteurising fermented foods kills all probiotic good bacteria life within. Pasteurisation renders Sauerkraut to little more than plain boiled cabbage, which is nice if you like boiled cabbage, but boiled cabbage contains no probiotic good bacteria!
How Much Sauerkraut to Eat Daily?
Q.. Does your first mouthful of Sauerkraut taste so good, you could eat a whole jar full?
Q.. Have you heard how good fermented foods are for you, but you don't know how much you should be eating?
Q.. You are generally in Good Health, but have never eaten fermented foods before?
A... To be honest, there is no right or wrong amount to eat, because we all have our own individual requirments. It may be wise, if you are new to fermented foods, that you take it easy to begin with, don't try eating a whole jar full straight off...
Start with 1 fork full, twice a day? This will give your body time to adjust to the rich influx of valuable probiotic good bacteria.
If you are already eating fermented foods, start with 1-2 forks full twice a day, gradually working your way up to 2-3 forks full, with 2-3 meals a day. This will ensure you keep your gut bacteria levels topped up and at healthy levels.
Serving Size = 30-40g
When you start to eat Sauerkraut and Kimchi Kraut regularly, you will begin to feel the great effects fermented foods can offer you, both in your physical, and in your mental health. Eating the right things really do make a big difference! You will also become familiar with portion sizes and eating regularity that is correct for you as an individual.
All our recomendations are based on average person. As we are all individuals, you should use your own judgement based on your own health requirements.
Three Examples of how to Enjoy Sauerkraut & Kimchi-Kraut (SK & KK)
There are a million and one variants on how to eat SK & KK, this is a tiny guide to get you started...
1... As a condiment, easily add the wow factor to any meal! Add 1-2 fork full to your plate and enjoy with your meal. The flavours in the SK & KK awaken your taste buds, and make your meal taste Zingy & alive!
2... Mix into a Salad! Tear up some lettuce leaves, add a few forks full of SK or KK, along with some SK/KK brine. Splash a little olive oil on, a squeeze of lemon and a pinch of black pepper. Depending on your dietry wishes, you could add other vegetables, cooked or raw and cold meats and cheeses. The variations are limitless!
3... In & On, a Sandwich, Burger or Hot Dog! As you are building your sandwich, burger or hot dog, apply a thin layer of SK or KK on it, remembering to let the brine drip off before adding it to your food creation.

These are numbers for 100g of Sauerkraut. Bear in mind when looking at Sodium levels, a typical serving is only around 30-40g
Want to take advantage of the Good Bacteria (Probiotics)?
Always make sure the SK & KK you consume is RAW.
Always keep our SK & KK in your refrigerator to slow the good bacteria from becoming too active.
Never heat your SK or KK. Cooking fermented foods always destroys the beneficial probiotic good bacteria and enzymes!
